Citrus Salad

It may sound a little odd to use soy sauce in a salad dressing, but after much experimentation, it turned out to be exactly what the dressing needed. Enjoy this tangy, refreshing salad with any meal!

Ingredients:  1 small orange or tangerine, 1 head of chopped lettuce, 1-2 C cherry tomatoes, 2 Tbs. olive oil, 1 Tbs. champagne or white wine vinegar, 3 Tbs. orange juice, 1/4 tsp. soy sauce, 1/4 tsp. dry thyme or rosemary

Directions:  Peel the orange or tangerine, and separate the sections.  Remove as much of the pith (that's the bitter, spongy white stuff) as you can.  To remove the seeds, just cut away the innermost part of the orange section, and if it's easy to do, peel away the skin (the orange will be sweeter without it).  Toss the chopped lettuce with the orange and cherry tomatoes.

In a small bowl, mix the olive oil and vinegar.  Add the orange juice.  Add just a bit of soy sauce, and keep adding more until the dressing is tangy enough.  Add the thyme or rosemary and toss the salad with the dressing.  Serves 4.
